Kaluga (Huso & Acipenser Dauricus Schrenki) is indigenous to the Amur River and is therefore sometimes referred to as River Beluga Hybrid. The caviar is sustainably farmed in Asia, in the mountains southwest of Shanghai, in the Thousand Island Lake natural reserve.

Ossetra Royal (Gueldenstaedtti), originally from the Caspian Sea, is the most popular variety of high-grade caviar. These delightfully buttery eggs are best known for their nutty flavor and dark color—ranging from black to bronze with shimmers of gold. A long-lasting flavor of the sea.
