Native to California, this caviar comes from the largest fresh water fish in North America, the Pacific White Sturgeon. This farm-raised sturgeon is highly regarded for the sustainable caviar it produces with black beads with platinum hues and generously sized pearls.
Medium-sized, delicate, black beads. Delicate texture with fine distinguishable roe. The flavor ranges from buttery to nutty with a touch of sweetness and can be compared to the taste of the Caspian Sea wild Ossetra caviar.
